大閘蟹處理,食用

1. 收到貨,未食的話,放入雪柜,底面都要有濕毛巾包住,留少少位透氣

2. 蒸之前,洗刷蟹身,蟹鉗的毛毛,記得不用拆繩 (好重要)

3. 蒸的時候,紫蘇葉放入水中,蟹要反轉蒸(肚向天)

   (水滾後計時)
   大閘蟹
   4兩 以下 18 分鐘
   5両 至 6両 , 20 分鐘
   7両 至 9両 , 25 分鐘
   蒸好後熄火再焗 5 分鐘

4. 食的時間,最緊要拎走蟹心,蟹肺,蟹腸,蟹胃

5. 食完唔好即刻沖涼,隔一陣先

溫馨提示:
大閘蟹反轉放在蒸碟上,肚身朝天,讓蟹膏或鮮蟹汁「兜」在蟹殼上。 
蒸大閘蟹的絕配是紫蘇葉,可以有效驅走大閘蟹本身的寒氣,
紫蘇葉最好放在滾水中蒸,讓成份透過蒸氣發揮到蟹上。 

蟹剪、蟹醋、薑糖茶、紫蘇葉 都會按量配送, 送完即止
