M7澳洲和牛已達日本A5極級質素,牛肉質香甜鬆軟,味道帶油香,入口鮮嫩而口即化。
澳洲和牛分級制度嚴格且完善,以牛肉風味,柔嫩度,以及多汁程度為指標,而主要是由成熟度,以及肋眼肌的大理石紋脂肪含量,又稱油花量(Marbling),兩種因素來決定。M7恰恰代表了頂級的品質。
煮法:
首先,把平底鍋放至爐上,以中火至大火加熱。當平底鍋燒熱後,感受到熱力即可。先用中至大火煎封牛扒的邊位以鎖住肉汁及定型。。另外不需要放油,因為和牛的油花會受熱溶化。然後,當牛扒第二面煎好後再轉為慢火煎至所需的熟度。煎牛扒的時候,牛扒只能翻一次。最後,加上粗鹽或黑胡椒便可食用。煎好放碟後必須靜待3分鐘,好讓肉汁有時間分佈到牛扒的每個角落,並且會變得柔軟多汁。
